Shrimp In Coconut Milk

Ingredients:

   1 1/2  pounds        large raw shrimp
   1      tablespoon    ghee -- (or oil)
   2      medium        onions -- thinly sliced
   2      cloves        garlic -- (crushed)
   1      teaspoon      finely grated fresh ginger
   2                    fresh red or green chiles -- (
   1      teaspoon      ground turmeric
   8                    curry leaves
   2      cups          coconut milk
   1      teaspoon      salt
                        lemon juice to taste
 

Preparation:

Wash shrimp, shell and de-vein. Heat ghee and fry onions> garlic and ginger until onions are soft but do not let them brown. Add chiles, turmeric, and curry leaves and fry 1 minute longer. Add coconut milk and salt and stir while bringing to simmering point. Simmer uncovered for 10 minutes, then add shrimp and cook 10-15 minutes more. Remove from heat and add lemon juice to taste.
