Ingredients:

   2      pounds        lamb or beef cubes
     1/2  cup           oil
   2                    onions -- sliced
   2      tablespoons   grated fresh ginger
   5                    garlic flakes -- minced
   3                    bay leaves
   2      teaspoons     ground coriander seeds
   1      teaspoon      ground cayenne pepper
     1/2  teaspoon      cardamom powder
   1      teaspoon      garam masala
   1      cup           well stirred yogurt
     1/2  cup           blanched almonds
     1/4  cup           heavy cream
                        a pinch of saffron soaked in water
                        salt to taste
 

Preparation:

Heat oil in a saucepan, fry onions, ginger, garlic, bay leaves until they are golden. Add meat along with coriander, cayenne pepper, cardamom garam masala, salt and fry for a few minutes. Add the yogurt, reduce the heat to low, cover and cook until the meat is tender. This takes about 30 minutes. Later, add the almonds, cream, saffron with water and cook for another 5 minutes.
