Potato Gravy

Ingredients:

 500      grams         potatoes
 600      milliliters   water -- (4 cups)
   2      teaspoons     groundnut oil -- (peanut oil)
   1      teaspoon      mustard seeds
   2      teaspoons      -- ¥
   1      gram          flour
   3      teaspoons     chile powder
     1/2  teaspoon      turmeric
   1      teaspoon      coriander-cumin powder -- (dhania-jeera)
                        salt -- to taste
   4                    kokum leaves
   2      teaspoons     jaggery
                        grated coconut -- for garnish
 

Preparation:

Boil the potatoes with 2 cups of water. Do not keep in water for a longer time. Peel the potatoes and cut into cubes. In a pan, heat oil and season with mustard seed and gram flour. Add potatoes, chile, turmeric, dhania-jeera, salt, kokum, jaggery and 2 cups of water. Simmer for 3-5 min. Garnish with grated coconut and serve.
