Apple Pecan Rice Slaw

Ingredients:

  2               cups  brown rice or extra long grain rice -- cooked & chilled
  2               cups  packaged coleslaw mix
  1                cup  apple -- unpeeled & chopped
     1/4           cup  pecans -- toasted & chopped
     1/3           cup  reduced fat mayonnaise or salad dressing
     1/3           cup  frozen orange juice concentrate -- thawed
  2          teaspoons  sugar
     1/4      teaspoon  salt
 

Preparation:

In large bowl, combine rice, coleslaw mix, apple and pecans. In small bowl, gradually stir in orange juice concentrate into mayonnaise; blend in sugar and salt. Add mayonnaise mixture to rice mixture; mix well. Cover and refrigerate at least 1 hour or up to 8 hours. *To toast pecans, spread in shallow baking pan. Bake at 350 degrees for 7 to 12 minutes.
