Mango Trifle

Ingredients:

  12                    cherries -- chopped
   1      can           thick alphonso mango pulp
   1                    alphonso mango -- (optional), peeled
                        -- and cubed
   1      kilogram      sponge cake
   1 1/2  cups          thick cream -- beaten
                        few drops vanilla essence
 

Preparation:

Preparation time: 5 minutes Chill: 2 to 3 hours 1. Add vanilla essence to the mango pulp. Reserve. 2. Cut sponge cake in fingers and arrange in a dish. Sprinkle mango pulp over the cake and reserve for 15 minutes. 3. Cover the cake with mango pieces and pour the cream over the top. Decorate with cherries and chill. 4. Serve chilled.
