Quick Crawfish Etouffee

Ingredients:

     3/4           cup  butter
  1                cup  onion
     1/2           cup  green bell pepper
  2               cups  celery
  1         tablespoon  flour
  1                cup  water
  1              pound  crawfish tails
  1           teaspoon  salt
     1/4      teaspoon  pepper
     1/4      teaspoon  tabasco sauce
  2          teaspoons  worcestershire sauce
     1/4      teaspoon  thyme
  1                cup  scallions
  2        tablespoons  parsley
  6               cups  cooked rice
 

Preparation:

Heat butter in a saucepot, over a medium flame add onions, bell peppers, and celery heat and stir for 5-6 minutes add flour; heat and stir for 1-2 minutes add water, reduce flame to low, heat, and simmer for 15 minutes, stirring often add crawfish, salt, pepper, tabasco, worcestershire, thyme, scallions, and parsley simmer for 5-10 minutes, just to heat crawfish through serve over hot cooked rice
