Goanese Chicken Shakuti (Chicken Cooked In Coconut)

Ingredients:

   1      kilogram      chicken -- cut up
                        ***Dry Roast***
   2      teaspoons     coriander seeds
   8                    dried         Kashmiri chiles
     1/2  teaspoon      cumin seeds
   1      teaspoon      fenugreek seeds
   5                    peppercorns
   2      teaspoons     peanuts (unsalted)
     1/4  cup           coconut, grated
                        ***************
   1      teaspoon      turmeric
   4                    cardamom pods, use seeds only
   6                    cloves
   1      1 inch piece  cinnamon
   1                    lemon, juice of
                        salt to taste
 

Preparation:

Cut chicken up into desired pieces. Dry roast the spices and coconut in a large pan (until coconut is a light brown, taking care not to burn the spices). Add the turmeric, cardamom, cloves and cinnamon to the roasted spices and grind to a powder. Fry the spice mixture in some ghee for a few minutes. Add the chicken and brown. Add salt and a little water and simmer until chicken is cooked. Sprinkle lemon juice over dish a few minutes before serving.
