Ingredients:

  1         Tablespoon  Unflavored Gelatin
     1/4           Cup  Cold Water
     3/4           Cup  Mayonnaise
  3        Tablespoons  Lemon Juice
  2             Stalks  Celery
  1              Small  Onion
  1       15-Ounce Can  Salmon, Drained
     1/2      Teaspoon  Dried Dill
     1/4      Teaspoon  Salt
     1/8      Teaspoon  Pepper
     1/3           Cup  Heavy Cream
 

Preparation:

Sprinkle gelatin over 1/4 cup cold water in small custard cup; let stand 3 minutes to soften. Bring to boiling 1 inch ater in small skillet or saucepan. Set custard cup in water; stir gelatin until dissolved. Ad dissolved gelatin to mayonnaise and blend well. Stir in lemon juice. Assemble and attafch food grinder using fine grinding plate. Turnt o speed 4 and grind celery, onion, and slamon into a large bowl. Fold in mayonnaise mixture, dill, salt, and pepper. Place cream in mixer bowl. Attach bowl and wire whip. Turn to speed 10 and whip until stiff. Fold whipped cream into salmon mixture. Spread into lightly oiled 4-cup mold and chill to set, about 2 hours. when ready to serve, unmold and garnish with cucumber slices and watercress.
