Salmon Cakes

Ingredients:

  1                Can  red or pink salmon -- (14 3/4 oz.)
                        drained and flaked
  1                     green onion -- sliced
  3        Tablespoons  prepared white horseradish
  2        Tablespoons  plain dried bread crumbs
  1           Teaspoon  soy sauce
     1/4      Teaspoon  coarsely ground black pepper
                        nonstick cooking spray
  4                     sandwich buns -- split
                        lettuce leaves
 

Preparation:

(now when I make these or tuna cakes, I usually add one egg but that is to my liking though) 1. In medium bowl, with fork, lightly mix all ingredients except cooking spray, buns and lettuce leaves. Shape mixture into four 3-inch round patties. Spray both sides of patties with nonstick cooking spray. 2. Heat skillet over medium heat until hot. Add salmon cakes, and cook about 5 minutes per side or until golden and hot. Serve on buns with lettuce. I do hope that this will be of some help.
