Samosas - Mixed Vegetable Filling

Ingredients:

  30      milliliters   cooking oil
   5                    curry leaves
   1      large         onion -- finely chopped
   1                    green chile -- finely chopped
   5      milliliters   crushed garlic
   5      milliliters   ground jeera -- (cumin)
   2 1/2  milliliters   turmeric
                        salt to taste
 500      milliliter    frozen mixed vegetables
  30      milliliters   chopped coriander leaves -- ()
  10      milliliters   chopped chives
 

Preparation:

Heat oil, add curry leaves and after a few seconds add onion, chile, garlic, jeera, borrie and salt. Allow to simmer for about 10 minutes. Add vegetables and cook a further 10 minutes. Mix in dhunia leaves and chopped chives when mixture has cooled. fills 36 samosas. The Cape Malay Cookbook.
