Pork Satay - 1

Ingredients:

   1 1/2  pounds        pork loin -- cubed
                        ***MARINADE***
     1/4  cup           soy sauce
     1/4  cup           creamy peanut butter
   2      tablespoons   lemon juice
   2      teaspoons     brown sugar
   2      teaspoons     curry powder
     1/2  teaspoon      crushed red pepper
   1      clove         garlic -- minced
                        ***PEANUT SAUCE***
   1      tablespoon    brown sugar
   2      tablespoons   creamy peanut butter
     1/2  teaspoon      crushed red pepper
   1      clove         garlic -- pressed
     1/2  cup           soy sauce
 

Preparation:

In a large bowl blend soy sauce with peanut butter. Stir in brown sugar, curry powder, lemon juice, red pepper and garlic. Add pork cubes. Toss to coat sides evenly. Cover and chill for 4 hours or overnight. Pour through strainer into serving dish or pitcher. Thread pork cubes on skewers. Broil 4 to 5 inches from flame for 15 minutes or until well done. Serve immediately with the dipping sauce.
