Chicken With Peanut Sauce

Ingredients:

   2      pounds        chicken -- cut up
     1/2  teaspoon      salt
   1      pound         tomatoes -- peeled
   6      ounces        peanuts
   1      small         onion -- chopped
   1      clove         garlic
     1/2  small         French roll or 1
   1      stick         white bread -- browned in oil
   4                    cloves
   2      tablespoons   lard or oil
                        salt and pepper to taste
 

Preparation:

Half cover the chicken with salted water; cover and cook until tender. Blend remaining ingredients, except lard or oil, and sauté sauce, adding a little of the cooking liquid. Stir until thick. Season to taste. Add the chicken and simmer only long enough for it to absorb the taste. Note: Pork or veal may be substituted.
