Ingredients:

   2      pounds        chicken -- skinned, boned,
                        -- cubed
                        ***marinade***
   1      tablespoon    ground coriander
     1/2  teaspoon      pepper
   3      tablespoons   lemon juice -- up to 4
   5      tablespoons   soy sauce
   6      tablespoons   peanut butter
   6      tablespoons   salad oil
   2      ounces        brown sugar
   2                    garlic cloves -- peeled
   1      pinch         cayenne pepper
 

Preparation:

Blend marinade ingredients together. Pour over chicken and let sit for 2 hours. Put pieces of meat on skewers and grill 3 minutes on each side. An unusual marinade that everyone loves. Also makes a great hors d'oeuvre. Great for cookouts with a pasta salad. If using wood skewers, soak skewers in water while chicken is marinating. This will prevent them from burning when on the grill
