Scallop Salsa

Ingredients:

   1      tablespoon    virgin olive oil
   8      ounces        sea scallops
   3                    chipotles chiles en adobo
   3      medium        tomatoes
   1                    avocado -- pitted, peeled, and
                        -- diced
     1/3  cup           cucumber -- diced
   1      tablespoon    lemon juice
 

Preparation:

Heat the oil in a skillet and sauté‚ the scallops over high heat for 2 minutes, until cooked through. Dice the scallops. Rinse the chipotle chiles with water and cut into thin strips. Add all ingredients to mixing bowl and combine thoroughly.
