Jicama-Melon Salsa

Ingredients:

   1      small         mango -- peeled, pitted
   1                    chili -- serrano, seeded and
                        one lime -- juice of
   1 1/2  tablespoons   bell pepper -- red, diced
     1/2  cup           cantaloupe -- diced
     1/2  cup           honeydew melon -- diced
   2      tablespoons   cucumber -- peeled, diced and
     1/2  cup           jicama -- peeled, diced
   2      teaspoons     cilantro -- chopped
     1/4  teaspoon      salt
     1/4  teaspoon      pepper -- black
   2      tablespoons   sour cream
 

Preparation:

In a food processor or blender, puree lime juice, mango and chile. Place diced vegetables and fruit in a mixing bowl, add puree and combine. Mix in cilantro, salt and pepper. Adjust seasonings to taste. Gently fold in sour cream. Serve with grilled fish or chicken.
