Ingredients:

   3      cups          finely chopped tomato
   1      cup           finely chopped cucumber
     1/2  cup           finely chopped red onion
     1/2  cup           finely shopped yellow sweet pepper
     1/4  cup           snipped fresh cilantro
   1      tablespoon    red wine vinegar
   2      teaspoons     olive oil
     1/2  teaspoon      salt
     1/4  teaspoon      sugar
   1      small         serrano chile pepper -- seeded, finely
                        -- chopped
   2      cloves        garlic -- minced
 

Preparation:

Combine all ingredients in a bowl. Cover and chill for at least 1 hour before serving. Store in the refrigerator for up to 2 days. Makes about 4 cups.
