Artichokes With Garbanzo Dip

Ingredients:

4         medium        artichokes
15        oz. can       reduced-sodium garbanzo beans, drained, reserve 6 tablespoons liquid
1/4       cup           lemon juice
1 1/2     teaspoons     olive oil
1         teaspoon      garlic, minced
1/2       teaspoon      grated lemon peel
2         tablespoons   parsley, next
3         tablespoons   scallions, sliced
1/4       teaspoon      crushed oregano
 

Preparation:

Trim arctic stems at base; remove small bottom leaves. If desired, trend tips of leaves and cut off top 2 inches of artichokes. Stand artichokes boom upright in deep saucepan. Add 2 to 3 inches boiling water. Cover; simmer 35 to 45 minutes until fork pierces base easily; drain. Meanwhile, blend or process moved beans, reserved liquid, lemon juice, olive oil and garlic until smooth. Transfer mixture to bowl and stir in lemon peel, parsley, scallions and oregano. Cover; chill until ready to use
