Wild Mushroom, Spinach, Red Onion Marmelata, And Feta Pizza

Ingredients:

  2                     red onions -- sliced
  2 1/2    Tablespoons  butter
  1                Cup  red wine
     1/4           Cup  port
  2        Tablespoons  sugar
  6        Tablespoons  balsamic vinegar
  1              Bunch  spinach leaves -- well washed
  1           Teaspoon  minced garlic
  1         Tablespoon  olive oil
                        lemon juice to taste
  1                Cup  wild mushrooms
  20            Ounces  pizza dough
     1/4         Pound  feta cheese -- crumbled
 

Preparation:

In a skillet sauté onions in 2 tablespoons butter over moderately high heat until golden. Add wine, port, and sugar and bring to a simmer, stirring. Add vinegar and cook until almost dry. Season with salt and pepper. In another skillet sauté spinach and garlic in oil over high heat until wilted. Season with lemon juice, salt, and pepper. In another skillet sauté mushrooms in remaining 1/2 tablespoon butter until almost dry. Season with salt and pepper. Preheat the oven to 450°ree;F. Roll out pizza dough into a thin layer. Spread evenly with onion mixture and top with spinach, mushrooms, and feta. Put pizza on a pizza stone or baking sheet and bake for 7 to 10 minutes, or until crust is puffy and bottom is crisp.
