Apricot Chicken

Chicken with apricot flavour, with sweet maranade,and crispy skin.Eaten with Veggies and rice.
 

Ingredients:

1          medium       Onion
1          Teaspoon     Garlic and Herb spice
500        milliliter   Apricot juice 
                        salt and pepper to taste.
1/2                     Green Pepper
2          cups         rice
2          Tablespoons  Apricot jam
 

Preparation:

Pre-heat oven to 25 degrees celcius. Remove chicken center. Mix appricot jam,greenpepper and some Garlic and Herb spices. Place appricot paste in center of chicken,followed by the whole onion. Flavour chicken with salt and pepper to taste. Place in caserole dish.Fill dish with appricot juice. Place in oven , temp adjust to 200 degrees celcius for 180minutes. Serve on a bed of rice with veggies of your choice.
