(cook on high heat in frying pan with oil)

1         cup           coarse ground bread crumbs
2                       eggs 
1/4       cup           water
1/2       cup           dredging flour
4                       skinned walleye fillets

Dredging Flour: yield: 1 cup
1         cup           all purpose flour
1         Tbspn         cajun seasoning
mix well
 

Preparation:

1) combine eggs and water 2) lay out a "breading station" with separate pans of dredging flour, egg wash and bread crumbs. 3) dust walleye with the dredging flour, dip it in egg wash and then coat generously with bread crumbs 4) cook on high heat in frying pan with oil.
