Tofu Salad

Chilled Tofu Salad that is very popular in Hawaii
 

Ingredients:

1         block         firm tofu, cut into bite sized squares
1         can           pink salmon or chunk white tuna, drained
1         medium        onion, sliced ( sweet onion optional )
2                       tomatoes, cut into cubes
3                       green onion stalks, thinly chopped
3         pieces        chinese cabbage, thinly sliced (won bok )

Sauce-
3/4       cup           soy sauce, light
1/2       cup           salad oil
1         T.            mirin
1         T.            sesame oil
                        toasted sesame seeds ( for garnish )
 

Preparation:

You will need a nice size, glass bowl that has a flat bottom. Start the salad with the Tofu on the bottom, flaked salmon or tuna next, onion, tomatoes, green onions, then cabbage. Mix the dressing well and pour over salad at the last minute right before serving.
