Fluffy Mustard Sauce

Ingredients:

2                       beaten egg yolks 
3         Tbsp.         Dijon mustard 
2         Tbsp.         vinegar 
3/4       tsp.          salt 
1         Tbsp.         butter 
1         tsp.          horseradish 
1/2       cup           cream, whipped
 

Preparation:

To egg yolks, add everything except last 3 ingredients. Cook over hot but not boiling water in a double-boiler, stirring until thick. Blend in butter and horseradish. Cool. Fold in whipped cream. Makes 1 and 1/2 cups.
