Strawberry Spinach Salad Sumertime

Ingredients:

Salad
1/4       cup           sliced almonds, toasted
1 1/2     cup           strawberries, hulled and quartered
1/2       medium        cucumber, sliced and cut in half
1/4       small         red onion, sliced into thin wedges
6         ounces        baby spinach

Dressing
1                       Lemon
2         tablespoons   white vinegar
1/3       cup           sugar
1         tablespoon    vegetable oil
1         teaspoon      poppy seeds (can be omitted)
 

Preparation:

Dressing: zest lemon to measure 1/2 teaspoon. Juice lemon to measure 2 tablespoons. Combine with oil, sugar and vinegar. Whisk until well blended. Chill until ready to use. Toast almonds in 350 degree oven for 10 minutes. Place spinach in large serving bowl. Add almonds, strawberries,cucumbers and onion. Whisk dressing and pour oversalad just before serving. Gently Toss. Serve immediately.
