Mexican Egg Muffin

Ingredients:

  1              Large  egg
  2          Teaspoons  water
  1           Teaspoon  chopped green onion
  1           Teaspoon  margarine
     1/2                english muffin---toasted
  1              Slice  processed cheese---cut into triangles
  1         Tablespoon  prepared salsa
 

Preparation:

1. In small bowl, beat egg, water and green onion.

2. In small skillet, melt margarine; add egg mixture. Cook and stir until egg is set. Spoon egg mixture onto muffin; top with cheese.

3. Place on baking sheet; broil until cheese begins to melt. Top with salsa. Garnish as desired.
