Ingredients:

  2             Cloves  garlic
  6               Cups  chicken broth
  1           Teaspoon  salt if needed
  6               Cups  shredded greens such as cabbage -- spinach or
                        escarole
  2                     eggs
     1/4           Cup  grated parmesan cheese
     1/2           Cup  seasoned croutons -- homemade or
                        purchased
 

Preparation:

Peel and split garlic. Add it to te broth and salt to taste. ring to a boil, add greens and simmer for 5 minutes. eat egg with cheese. Just before serving, pour the egg mixture gradually into the soup, stirring until the egg sets. Top with croutons.
