Squash Medley, Slow Cooker

Ingredients:

   1      pound         summer squash -- (about 8), unpeeled
     1/2  teaspoon      salt
   2      small         tomatoes -- peeled and chopped
     1/2  small         green pepper -- chopped
     1/4  cup           sliced green onions
   1      cup           chicken broth
   4      slices        bacon -- cooked and crumbled
     1/4  cup           fine dry breadcrumbs
 

Preparation:

maeld 5 to 6 servings Thinly slice squash; sprinkle with salt. In slow cooker, arrange alternate layers of squash with tomatoes, green pepper, and onions. Pour broth over. Top with bacon, then bread crumbs. Cover and cook on low for 4 tgo 6 hours.
