Spinach Parmesan Pie

Ingredients:

  1         tablespoon  butter
  4             medium  green onions -- sliced
  2                     garlic cloves -- minced
  10            ounces  spinach -- chopped, thawed and squeezed to drain
     1/2           cup  cottage cheese -- small curd
     1/2           cup  bisquick baking mix
  1                cup  milk
  1           teaspoon  lemon juice
     1/4      teaspoon  pepper
  3                     eggs
  3        tablespoons  grated parmesan cheese
     1/4      teaspoon  nutmeg
 

Preparation:

Heat oven to 350. Grease pie plate 9 x 1 1/4". Melt butter in 10" skillet over medium heat. Cook onions and garlic in butter 2 to 3 minutes, stirring occasionally; until onions are tender. Stir in spinach. Layer spinach mixture and cottage cheese in pie plate. Stir baking mix, milk, lemon juice, pepper and eggs until blended. Pour into pie plate. Sprinkle with Parmesan cheese and nutmeg. Bake uncovered about 35 minutes until knife inserted in center comes out
