Ingredients:

  2        tablespoons  onion -- finely chopped
     1/4      teaspoon  ground nutmeg
  2        tablespoons  butter or margarine
  1                can  {10 3/4 oz.} condensed cream of chicken
                        -- soup
  2           packages  {10 oz. each} frozen chopped spinach -- cooked and well
                        -- drained
  1                cup  soft bread crumbs
  3                     eggs -- separated
                        croutons -- (for garnish)
                        sour cream
 

Preparation:

1. Cook onion with nutmeg in butter in a saucepan until tender. 2. Add soup, spinach, bread crumbs and egg yolks. 3. Beat egg whites in a bowl until soft peaks form; fold into spinach mixture. 4. Pour mixture into buttered, floured 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan; bake in preheated 375 F. oven 1 hour, or until knife inserted in center comes out clean. 5. Let stand 10 minutes; invert on serving platter. 6. Garnish with croutons; serve with sour cream.
