WILTED Spinach

Ingredients:

   1      Pound         spinach
   1      medium        Onion -- chopped
   1      slice         Bacon -- cut up
   1      Clove         Garlic -- finely chopped
   2      tablespoons   Olive or -- Vegetable oil
     1/2  teaspoon      Salt
     1/4  teaspoon      Pepper
     1/4  teaspoon      Ground nutmeg
                        Juice of 1/2 -- Lime
 

Preparation:

Prepare spinach as directed. Cook and stir onion, bacon and garlic in oil in Dutch oven over medium heat until bacon is crisp; reduce heat. Stir in salt, pepper and nutmeg. Gradually add spinach. Toss just until spinach is wilted. Drizzle with lime juice:
