1/2 teaspoon salt
2 tablespoons cream of rice
1 tablespoon butter or margarine
1 jar strained carrots -- peas, spinach,
green beans -- or garden

Preparation:
Combine milk and salt; scald. Sprinkle in cream of rice and cook, stirring constantly, for 1 minute. Remove from heat, cover and let stand 4 minutes. Stir in butter, then vegetables and egg. Pour into 3 buttered 5 ounce custard cups. Place in a pan of hot water and bake in a preheated 350 degree oven until set, about 40 to 45 minutes. With a sharp knife, loosen edges of timbales and unmold. Makes 3 servings. |
