Vegetable Kugel

Ingredients:

   3                    zucchini 
   2      bunches       broccoli stalks (use florets in salads or steamed) 
   2                    carrots -- scraped 
   1                    potato -- peeled 
   1      large         onion -- peeled 
   3                    eggs 
     1/2  cup           oil 
   1 1/2  teaspoons     salt freshly ground black pepper
 

Preparation:

1. Grate zucchini, broccoli stalks, carrots, potato, and onion.

2. Beat together eggs, oil, salt, and pepper. [assumed: mix with grated vegetables.]

3. Pour into greased baking pan. 4. Bake at 350 F for 1 1/4 hours.
