Tropical Fruit Sabayon With Ginger

Ingredients:

  1                     kiwi
  6                     fresh strawberry
  4                     egg yolk
     1/2           cup  sugar
     1/4           cup  dry white wine
  2        tablespoons  rum
     1/2      teaspoon  ground ginger
  1         tablespoon  candied ginger
 

Preparation:

Arrange fruit onto individual serving plates or dessert cups combine yolks, sugar, wine, rum, and ground ginger in a stainless steel bowl set bowl over, but not in, hot water whisk until tripled in volume and mixture 170 degrees spoon over fruit garnish with candied ginger serve warm or set bowl of finished sauce in ice and whisk to cool pour over fruit garnish with candied ginger serve chilled
