Tex-Mex Corn and Beans

Ingredients:

  2        tablespoons  roasted garlic
                        dressing/marinade
     1/2      teaspoon  cumin
     1/2      teaspoon  salt
  1                can  black beans -- drained and rinsed
  1            package  frozen succotash
  3        tablespoons  chopped roasted red peppers
 

Preparation:

Place succotash in a microwave-safe bowl. Add 2 tablespoons water, cover and microwave on high (100%) for 6 minutes. Stir in black beans, red peppers and salt. Microwave for 1 to 3 minutes, or until lima beans are tender (timing will depend on microwave ovens). Stir in Roasted Garlic Dressing and cumin. Serve warm or at room temperature. Prep Time: 5 minutes Cook Time: 8 minutes Makes: 4 servings
