Ingredients:

  1 1/2         pounds  zucchini or summer squash
  1             medium  onion
  2        tablespoons  margarine
  2        tablespoons  flour
  1                can  green chiles
                        monterey jack cheese -- diced
  1                cup  cottage cheese
  1                     egg
  2          teaspoons  dried parsley
 

Preparation:

Fry zucchini or summer squash and onion to tender in margarine. Add flour and green chiles. Put in casserole. Cover with diced cheese. Cover with cottage cheese, egg and parsley. Cover all with parmesan cheese. Bake at 350 for 30-45 minutes or until bubbly.
