Preparation:
Clean and scrub potatoes well and bake in 400 oven for 1 hour.
While potatoes are still hot, cut a top off. Reserve tops for Potato Skins.
Scoop out pulp carefully, leaving a thin shell.
Mash potatoes adding salt pepper and margarine to taste and milk as needed. Add cheese and onions. Continue mashing slightly.
Spoon potato mixture back into shell.
Bake again in preheated 400 oven for about 20 minutes or till lightly brown.
Cool completely then flash freeze on cookie sheet. When frozen bag in ziplock bags.
Reheat in microwave oven or conventional oven. Do not need to be defrosted before heating. |
