Preparation:
Wash, trim and pare parsnips. Cut thick portions of parsnips in half lengthwise. slice 1/2 inch thick. In a 2-quart casserole, combine parsnips and first amount of orange juice. Cover. Microwave at full power (High) for time listed for number of servings stirring once: 8 servings: 11 to 12 minutes 4 servings: 8 to 9 minutes 2 servings: 5 to 6 minutes In a screw-top jar, shake together flour and second amount of orange juice. Stir into parsnips and juices. cover. Microwave at full power (High) 2 1/2 minutes or until thickened and bubbly, stirring once. Let stand, covered, 2 minutes.
Variation using quartered parsnips: Wash, trim and pare parsnips using amounts listed above. Cut into fourths. Combine with first amount of orange juice. Microwave as follows: 8 servings: 12 to 14 minutes 4 servings: 9 minutes 2 servings: 5 to 6 minutes Continue with recipe as explained above. |
