   3      pounds        Fresh peas -- shelled
   4      tablespoons   Butter
   3      tablespoons   Olive oil
     1/4  cup           Chopped shallots
     1/8  pound         Prosciutto -- thinly
                        and julienned
   5                    Sage leaves
     1/2  cup           Fresh mint -- chopped
                        Salt and pepper
 

Preparation:

Mint adds a piquant note to this rich dish. 1. Add peas to lightly salted boiling water for 10 minutes. Drain. 2. In saute pan, add butter, oil, Prosciutto, sage and shallots. When hot, add peas and saute for 2 minutes. Add chopped mint and serve. The mint adds a piquant note to this rich vegetable dish.
