Preparation:
Wash okra. Cut in small thin slices. Heat olive oil and cook okra until
it
is no longer sticky.
In another skillet, make a medium dark roux with 1 tablespoon oil and
flour. Add onion, bell pepper, and celery. Simmer until tender. Add
tomatoes and simmer for 5 minutes. Add okra, salt and pepper and simmer for
1
