Preparation:
For each green or red pepper, use 1/2 cup cooked couscous. I slice the top off the green pepper and trim off all the pepper part, which I dice. I add 1 tablespoon sp minced onion, a smattering of diced fresh oregano, lots of black pepper and cheese. I use either 2 tablespoon sp strong cheddar or 1 tablespoon sp crumbled feta. Place in a baking dish with about 1/4" of water in the bottom of the pan. Bake at 350F for 30 minutes.
Other times I use this recipe:
This one makes 4 peppers. Take 1/4 cup minced red pepper, 1/4 cup minced green pepper, 1/4 cup minced onion, 1/4 cup minced celery. Mix this with 1 teaspoon italian seasoning, a couple cloves of minced garlic, some black pepper, 1 cup mozzarella cheese, a beaten egg and 1 cup cooked barley. Sometimes I add 1/2 cup diced cooked chicken. Put in the peppers and sprinkle w2ith a little more cheese. Cook as above. |
