Impossible Vegetable Pie

Ingredients:

  2               cups  broccoli -- chopped or sliced
                        -- cauliflowerets
  1             medium  onion -- chopped
  1              small  green pepper -- chopped
  1                cup  cheddar -- shredded
     3/4           cup  bisquick baking mix
  1 1/2           cups  milk
  1           teaspoon  salt
     1/4      teaspoon  pepper
  3                     eggs
 

Preparation:

Heat oven to 400. Grease pie place, 10 x 1 1/2". Heat 1 inch water (salted if desired) to boiling; add broccoli. Cover and heat to boiling. Boil about 5 minutes or until almost tender; drain thoroughly. Mix broccoli, onion, green pepper and cheese in pie plage. Stir remianing ingredients until blended. Pour into pie plate. Bake uncovered 35-40 minutes or until knife inserted between center and edge comes out clean. Let stand 5 minutes before serving. Note: 10 oz. frozen chopped broccoli or cauliflower, thawed and drained can be substituted for the fresh broccoli or cauliflower. Do not cook. For an Impossible Spinach Pie, substitute 10 oz. frozen chopped spinach, thawed and squeezed to drain for the broccoli; do not cook. Omit green pepper. Substitute Swiss cheese for the Cheddar cheese. Add 1/4 t. ground nutmeg with the pepper. Bake about 30 minutes.
