Ingredients:

   2      tablespoons   butter
   1      cup           chopped onions
   3      cups          cut broccoli -- (3 to 4)
   6                    carrots -- cut into 3-inch
                        julienne strips -- (6 to 8)
   1      can           sliced water chestnuts -- (8 oz.) drained
   1      cup           heavy cream
     1/2  cup           grated cheddar cheese
     1/2  cup           mayonnaise
     1/4  cup           parmesan cheese
 

Preparation:

Saute onion in butter in a small skillet. Cook the vegetables in a small amount of water until crisp-tender (about 5 minutes). Layer the vegetables, onions and water chestnuts in a 2-quart baking dish. Preheat oven to 350 degrees. Whip cream. Fold cheeses and mayonnaise into cream and spread on top of the vegetables. Bake uncovered for 30 to 40 minutes.
