Greek Orzo

Ingredients:

                        water
   2      cups          orzo
   1 1/2  teaspoons     salt
   3      tablespoons   butter
   2      large         green onions -- sliced
     1/4  cup           sliced mushrooms
     1/2  cup           finely crumbled feta cheese
   2      tablespoons   chopped parsley
   1      dash          pepper
 

Preparation:

In a 4-quart saucepot bring water to a boil. Add orzo and salt. Cook and stir till tender. Drain. Set aside. In medium skillet, melt butter. Add green onions and mushrooms. Saute over med-heat. Stir in orzo, feta, parsley and pepper. Serve warm. Approximately 5 minutes.
