GRAIN and VEGETABLE Stew

Ingredients:

  3               cups  water
  1                     leek cut thinly
  2                     carrots cut into thin match sticks
  1                cup  small cauliflower florets
  3               cups  cooked leftover grain
  1 1/2    tablespoons  Clearspring Mugi or Genmai Miso -- (or to taste)
  2        tablespoons  juice squeezed from freshly grated ginger
                        root
                        Garnishes - roasted seeds -- chopped salad
                        onions, toasted
                        strips of nori sea
                        vegetable
 

Preparation:

Bring the water to a boil, add the leeks and cook uncovered for 2-3 minutes. Add the rest of the vegetables and cooked grain and simmer for 10-15 minutes (until the vegetables are cooked), using a flame diffuser to prevent scorching on the bottom. Add the seasonings and gently simmer for 3-4 minutes. Serve with the garnishes A good and quick way to revitalise leftover grains. It's a meal in itself and incredibly delicio
