Goat Cheese Stuffed Jalapeno Peppers

Ingredients:

  12             large  green jalapenos want hotter -- use red
     3/4         pound  applewood smoked goat monterey jack *or*
     3/4         pound  smoked goat queso fresco -- (appx.1/4 wheel)
  2              large  fresh eggs
                        italian flavored bread crumbs
                        non stick spray vegetable oil
 

Preparation:

Slice a small pocket on one side of the Jalapenos and place a thick slice of the Smoked GOAT Monterey Jack or Smoked GOAT Queso Fresco inside Beat eggs thoroughly and dip the Jalapeno in them. Place bread crumbs on plate and roll the egg dipped Jalapeno to cover. Arrange on cookie sheet that has been sprayed with vegetable oil and place in preheated 375 degree oven for 25-30 minutes or until slightly browned. Serve with or without fresh salsa for dipping.
