     1/2  cup           water
   2      tablespoons   butter
     1/2  teaspoon      salt
     1/4  teaspoon      pepper
     1/4  teaspoon      garlic powder
   3      medium        carrots -- scrapped and

                        -- 1/4 inch slices
   2      medium        size green peppers -- cut into 1/2 inch
                        -- pieces
   1      large         onion -- cut into 8 wedges
   2      medium        size yellow squash -- cut into 1/4 inch
                        -- slices
   2      medium        zucchini -- cut into 1/4 inch
                        -- slices
   1      pound         fresh mushrooms -- sliced
   1      cup           shredded Cheddar cheese -- (4 oz.)
 

Preparation:

Combine water, butter, salt, pepper and garlic powder in a Dutch oven; bring to a boil. Add carrots; cover, reduce heat, and simmer 5 minutes. Add green pepper, onion, yellow squash, and zucchini; cover and simmer 10 minutes. Stir in mushrooms; cover and simmer 3 to 4 minutes. Drain. Place vegetables in a lightly greased 13 x 9 x 2 inch baking dish; sprinkle with cheese. Broil just until cheese melts.
