Fresh Mango Chutney

Ingredients:

   2       c            Diced mango (avoid fibrous parts)
     1/4   c            Chinese preserved black beans, rinsed
     1/4   c            Green onions, thinly sliced
                        -on the bias
                         CHOPPED FRESH------------------------
     1/4   c            Rice wine vinegar
   1       c            Light olive oil
   1       tb           Toasted cumin seed
     1/4   c            Diced red onions
   2       tb           Grated ginger
   2                    Red jalapeno peppers, sliced in thin circles
   1       small          Sweet red pepper, diced
                        ------------------------1/2 CUP MIXED, --  
                        Oregano
                        Zest and juice of one lime
                        Zest and juice of one orange
 

Preparation:

Mix together all ingredients; adjust seasoning with salt and citrus. Let sit for a few hours before serving.
