Cheesy Italian Zucchini Bake

                        Wesson No-Stick Cooking Spray
  3               Cups  shredded zucchini
  1                Can  Diced Tomatoes with Italian Style Herbs -- (14.5-oz)
  1                Cup  rolled oats
     1/4           Cup  grated Parmesan cheese
  1                     egg
     1/2      Teaspoon  Italian seasoning
     1/8      Teaspoon  black pepper
     1/4           Cup  Shredded Mozzarella Cheese
 

Preparation:

Preheat oven to 375 F. Spray eight-inch square baking dish with cooking spray. Press zucchini between paper towels to remove excess moisture. In a large bowl, combine zucchini, tomatoes, oats, Parmesan cheese, egg and pepper; mix well. Place in sprayed baking dish. Top zucchini mixture with mozzarella cheese; cover loosely with foil. Bake 30 minutes. Remove foil. Bake an additional 15 minutes, or until heated through. Makes 4 servings.
