Preparation:
halve cucumbers, remove seeds, and slice thinly combine with salt-mix well let stand for 15 minutes, rinse, and drain well place a cupful of cucumber in a clean towel and squeeze dry remove to a mixing bowl and repeat with remaining cucumber combine rice vinegar, sugar, and remaining salt-mix well pour over cucumber slices-mix well cover and chill for 15-30 minutes spoon into small shallow bowls sprinkle with sesame seeds garnish with carrot and daikon serve slightly chilled |
