Cabbage Casserole

Ingredients:

  1        Medium Head  cabbage -- chopped
  1                     onion -- diced
  1                     or more garlic cloves (I use 6 or so -- but we LOVE
                        garlic)
  1               Tsp.  Italian herbs
  1               Tsp.  salt
     1/2          Tsp.  pepper
  3               Cups  cooked rice (I like to add a bit of black
                        pepper to the cooking water)
  1            Package  veggie burgers -- crumbled (I like
                        Morningstar grillers)
  2               Cans  tomato soupgrated cheese (optional)
 

Preparation:

1. Heat a little oil in a big pan or skillet and saute the onion and garlic until onion is soft. Add cabbage, Italian seasonings, salt, and pepper. Continue to cook until cabbage is soft and cooked. 2. In a large, shallow casserole layer first the rice, then veggie burger, then cabbage. Spread tomato soup evenly on top of cabbage. Top with cheese (if desired) and bake at 350 for 20 to 30 minutes (if no cheese, you may want to cover it with foil).
