Broccoli with Peppers

Ingredients:

  4          teaspoons  olive oil
  1              small  yellow onion -- finely chopped
  2             cloves  garlic -- minced
  1         tablespoon  water
  4               cups  small broccoli florets 
  1              small  sweet red pepper -- cored,seeded and
                        -- cut lenghwise into strips 1/2" wide
  1           teaspoon  dried oregano -- crumbled
  1              pinch  red pepper flakes
 

Preparation:

In a heavy, 12 inch skillet heat olive oil over moderate heat 1 minute. Add onion, garlic, water, broccoli, red pepper, oregano and red pepper flakes; cook, stirring, 2 minutes. Cover skillet; reduce heat to low and cook 6 to 8 minutes longer, stirring often, until broccoli is tender but still crisp.
